Bourbon Peach Cobbler
Ingredients
Filling
- 2 15 oz cans sliced peaches
- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup whole milk
- 4 tsp baking powder
- 1 tsp sea salt
- 1 tsp cinnamon
- 1 tsp vanilla extract
- ½ tsp nutmeg
Topping
- ½ cup brown sugar
- ½ cup granulated sugar
- 3 tbsp butter
- ¼ cup bourbon optional
- ½ tsp nutmeg
- Whipped cream for serving
Instructions
- Preheat oven to 400° F. Prepare a 10 inch cast iron skillet or a 9"x13" baking pan
- In a large saucepan over medium heat, whisk together brown sugar, ½ cup sugar and ½ teaspoon nutmeg. Mix in butter, bourbon and 2¾ cups of water. Bring to a boil, stirring until sugar is fully dissolved. Remove from heat and set aside.
- In a large bowl, mix flour, 1 cup sugar, baking powder, salt, cinnamon and ½ teaspoon of nutmeg. Add milk and vanilla and combine.
- Fold in sliced peaches. Pour filling into prepared pan, pour on topping.
- Bake for 50-55 minutes, or until cooked through and light brown.
- Let cool 15 minutes before serving.
- Enjoy with whipped cream.
